So my little Crockpot whores have returned to my blog for another lazy meal idea? :) Perfect!
Start out by chopping up a red onion, red bell pepper and green bell pepper.
Throw all of that into the crock pot. Add 1/2 cup of chicken broth.
Get out your chili powder, cumin and lime juice. Mix this in a small bowl to pour over the chicken. It all depends on how spicy you like your fajitas. I used probably 3 tablespoons of both spices and 8 drops of lime juice. Add 2 tablespoons of salt to this as well.
Now you can add the chicken. This really depends on how many people you are feeding. I use one chicken per person. I also use frozen chicken if I'm super lazy that day. Iused 4 chicken breasts. Pour the mixture over the top of the chicken.
Cook on low for 6-7 hours and serve with warm tortillas and sour cream on the side or whatever other side things you prefer with your fajitas. This is one of my favorites. I hope you enjoy!
